Ander's mom is an amazing cook, and this is her recipe for Beef Enchiladas. They are so good, I'm telling you: you WILL have this for dinner tonight. I'm going to post the pictures step by step so it's super easy for you to follow along!
Put a pound of raw ground beef in a big bowl
Put these things in the bowl with the beef:
A piece of bread broken up into little bits
1/2 of a chopped onion
One egg
Garlic powder
1/4 tsp of black pepper
Now mush them all together until they're combined completely and throw into your skillet and cook on medium heat until the hamburger is completely done
While that's cooking the mixture preheat the oven to 350
Pour enough enchilada sauce on the bottom of the dish you will be using. Use just enough sauce to cover the entire bottom of the dish. I used mild enchilada sauce, but you can use whatever you like.
When the mixture is done, spoon a bunch into a tortilla and wrap it all up like a burrito
and set inside your dish
Pour the remaining enchilada sauce over the top of your enchiladas
Sprinkle the top of your enchilada with cheese (as you can see, we like cheese on our enchiladas...)
Bake for about 10-15 minutes, keeping an eye on them and presto! You have a yummy dinner!
We eat ours with sour cream, lettuce, and a little bit of lime juice. THEY ARE SO GOOD! And usually you'll have leftovers! What a blesseen! Enjoy, my friends.
